WHAT IS ICEWINE?
Icewine is a sweet wine produced from grapes naturally frozen on the vine and pressed while frozen at -46°F.  Ontario’s microclimate is uniquely suited to the annual production of Icewine as warm summers allow grapes to ripen while cold harsh winters allow natural freezing on the vine. Ontario produces 80% of the world`s Icewine and is the market lead in the category.

Harvested when temperatures reach -46°F the grapes are ready to be harvested. Once picked the naturally frozen grapes are pressed immediately. Some varietals are pressed a second time for late harvest wines.

The concentrated juice is then collected, and the winemaker prepares it for bottling. The resulting wine is high in natural sugar, low in alcohol, has an amazing acidity level, and is intensely sweet and flavorful. It’s widely regarded as one of the world’s most exquisite dessert wines. Proudly Canadian.

TASTING NOTES

North Wind has a bright, golden hue in the glass, which leads to aromas of wildflower honey, candied orange peel, and lychee. You’ll find flavors of pineapple, peach, and honey on the palate. This is a benchmark example of Vidal Icewine from Canada with the hallmark voluptuous mouthfeel, coupled with high acidity to balance.

TECHNICAL INFORMATION
North Wind is produced to satisfy all VQA requirements to be labelled as Canadian Icewine. It was harvested between -8C and -10C and has a Brix at harvest of 35. The residual sugar ranges between 180 g/l to 195 g/l and the total acidity ranges from 7.5 to 8.5 g/l depending on the vintage.
