North Wind late Harvest Cabernet Franc

VINTAGE
Although 2019 was a rainy and cool year reduced crop yields for whites enabled some very good quality fruit.  Grapes like Pinot Grigio, Chardonnay, Viognier, Sauvignon Blanc and Gewurztraminer fared well. Rains lessened  later in the season. It was a season where all varieties stayed on the vine longer than usual to balance PH, Acidity, and Brix. In the fall there was an unusual early frost that hit the later maturing grapes increasing sugar levels. Good or fair would be an accurate assessment with some interesting characters for the fruit. 

TASTING NOTES

Harvested in the cold of winter, this wine has aromas of ripe, red strawberries and cherries. These flavours repeat on the palate but with an extra dimension of cranberries that highlights the wine’s fresh, cool climate acidity. This acid-driven length helps balance out the wine’s luscious residual sugar which is a hallmark of quality dessert wine. 

FOOD PAIRING
This wine is perfect as an aperitif or digestif. It also can be enjoyed with astringent cheeses, spicy foods, or desserts less sweet than the Icewine (focus on citrus flavours).  Examples: Aged Cheddar or Blue Cheese, Spicy foods (Thai, Mexican, Indian etc.),  Dark Chocolate Covered Strawberries,  Black Olive Tapenade, Charcuterie.
